Time: 40 minutes + approx. marinating time for tempeh Quantity: 4 servings Ingredients - kebab: 200 g tempeh 5 tbsp olive oil 1 tbsp tamari soy sauce 1 teaspoon carob molasses 1 teaspoon sweet paprika 1/2 teaspoon chilies 1/2 teaspoon ground coriander seeds 1/2 teaspoon ground mustard seeds 1/2 teaspoon ground cumin seeds 1/2 teaspoon rosemary 1/2 teaspoon oregano 1/2 teaspoon thyme Ingredients - sauce: 160 ml coconut yogurt 2 tablespoons of coconut-potato mayonnaise (recipe 40) or coconut-cauliflower mayonnaise (recipe 106) 1 teaspoon truffle oil 1/2 teaspoon ground black pepper 1/2 teaspoon asafetida or granulated garlic 1/2 teaspoon salt Ingredients - side dishes: 2 tortillas (recipe 406) 1/6 iceberg lettuce A few cherry tomatoes 1 handful of fresh cilantro leaves 1 handful of parsley 1 handful of fresh mint Method of preparation: Slice the tempeh into thin slices, the size of slices of a sliced traditional kebab from the grill. Mix a marinade of olive oil, soy sauce, carob molasses with sweet paprika, chilies, ground coriander seeds, mustard seeds and cumin, as well as rosemary, oregano and thyme grated in a mortar. Spread it on the tempeh slices and leave it for about 2 hours to marinate well. Then we put it in the oven set at 240°C with the top grate for about 10 minutes. Bake on one side being careful not to burn it. While the kebab is baking, mix coconut yogurt with mayonnaise, oil and spices, and cut vegetables and greens. When the kebab is ready, we can serve it in a tortilla lined with vegetables with sauce and greens. Such kebab can also be served with fries or in a roll. It all depends on your creative ingenuity.
