Recreating Jamaica’s Legendary Jasper’s Rum Punch

Jasper was well know for his drinks, especially his version of the Planter's Punch. The two recipes today are for the most part the same, utilizing Jasper's Mix or the Basic Stock Mix, and one uses Coruba rum and the other Wray & Nephew. For the basic stock mix or Jasper's "Secret" mix, I followed the recipe from Ted Haigh's Vintage Spirits and Forgotten Cocktails. This recipe calls for 12 limes and 1 1/2 cups of sugar. Overall, I found this ratio to be too sweet for my tastes. That can easily be adjusted in the cocktail, but overall, I think this mix has too much sugar in it (about 45 brix). When I make a planter's punch, my lime + sugar combo is around 27 brix.
