Turkey Steaks Stuffed with Mushrooms with Madeira Sauce

This is such a good recipe to have in your repertoire. Simple to make but so delicious and perfect for a dinner party. The key here is to chop the mushrooms really finely and fry on medium heat until all the moisture has evaporated. This intensifies the mushroom flavour that goes so well with the delicate turkey steaks. Ingredients: 6 turkey breast steaks 400g mushrooms 80g mozzarella 120g soured cream 3banana shallots 2 tbsp wholegrain mustard 1 tbsp Dijon mustard 1 tbsp horseradish ½ onion 100ml Madeira wine knob of butter salt and pepper chopped chives
