How To Make Chocolate Covered Ritz Cracker Cookies
Kathy's Southern Kitchen 1 24oz Package of Almond Bark (Chocolate or White Chocolate) 2 Large Sleeves of Ritz Crackers (more or less) 1 Cup of Peanut Butter (approximately) Heath Pieces or Kosher Salt Place half of the crackers on a piece of wax paper. Top crackers with about a teaspoon of peanut butter. Place another cracker on top of the peanut butter, pressing lightly so that the peanut butter spreads to the edges of the cracker. Melt almond bark in a microwave proof bowl for 2 minutes at 50% power. Stir and cook in one minute intervals, stirring each time until the almond bark is smooth and completely melted. Using two forks, take each of the peanut butter crackers, one at a time and dip it into the chocolate. Make sure top, bottom and sides of the cookie are coated. Top with Heath Pieces or Kosher Salt. Allow the cookies to sit at room temperature until completely set. This takes approximately 2 hours. Enjoy!
