Recipe and process for making low gluten Einkorn bread. Recipe: 1 cup warm water -120 degrees 2 tsp yeast 1/4 cup honey (1/8 cup honey, 1/8 cup molasses) 2 Tbs olive oil 1 tsp salt 400 grams (3 cups) whole wheat Einkorn flour ——— Heat water, add yeast and honey. Let sit fir 5 minutes until foamy. In a large mixing bowl, add flour and salt. Mix. When yeast is foamy, add olive oil to the yeast liquid. Mix, then add to flour mixture. Mix dough until combined. Cover and place in a warm spot so it can rise. At least one hour. Once dough has doubled in size, put into a 8.5x5” loaf pan. Allow to rest for 30 minutes. The dough will rise again. After 30 min, place dough in a preheated 375 degree oven for 30 minutes. Remove from oven to cool on a wire wrack. Store once cooled in a food storage bag in the refrigerator.
