This "Pond Weed" Has More Protein Than Beef Per Gram — And It Doubles in Size Every 48 Hours

NASA studied it for long-duration space missions. Communities in Thailand, Myanmar, and Laos have eaten it for centuries. It doubles in size every 24 to 48 hours, requires no soil, no fertilizer, and almost no space. And here in the West, we spend money trying to kill it from our ponds. Duckweed — specifically Wolffia globosa — contains between 20 and 35 percent protein by dry weight, all nine essential amino acids in ratios that meet WHO recommendations, more omega-3 fatty acids relative to omega-6 than almost any food you can eat, and a growing body of research showing it may be one of the only plant-based sources of vitamin B12.
