ATHENS VLOG: SWEDISH CREAM BUNS! SEMLOR || LIVING IN GREECE

Kalimera!😁 Join us today for some Swedish traditional baking! Today we are making Swedish "Semlor", Swedish cream buns. In Sweden we have a day called Fettisdagen (Fat Tuesday) and everyone eats Semlor. It's the last day to eat a high-calorie meal before the fasting of Lent. Semla is a very traditional Swedish delicacy. If you feel like baking the Semla, you find the recipe here: Semlor (Swedish cream buns) 10 buns 100 grams butter 25 grams yeast 2,5 dl milk 1 egg 0,75 teaspoon cardamom 1 dl sugar 2 ml salt 8 dl flour 1 egg for brushing Filling: 3/4 dl sugar 3/4 dl water 1 ml bitter almond extract 200 grams almond paste 1/2 dl almonds 3 dl whipped cream Icing sugar Melt the butter and add the milk. Heat until 37 degrees. Crumble the yeast into a bowl. Pour the butter-milk over the yeast and mix until the yeast has dissolved. Add egg, sugar, salt, cardamom and almost all the flour (save a little for the baking). Mix everything to a dough. Let the dough rise for 30 minutes. Filling: Heat up water and sugar until it boils and the sugar has dissolved. Move the pan from the stove. Add bitter almond extract. Cut the almond paste in smaller pieces. Mix it together with the water-sugar-bitter almond liquid. Mix it until it’s a smooth cream. Roast the almonds in a frying pan until they get some color. Chop the almonds and add it to the almond paste. Put the oven on 200 degrees. Work the dough and use the rest of the flour. Make 10 round buns. Put them on an oven tray. Let them rise for 30 minutes. Whisk 1 egg and brush the buns. Put them in the oven for 14 minutes. Cut off the tip of the bun. Spread on the almond paste. Whip the cream. Put the cream on top of the almond paste.
