Recipe: Poc Chuc Pork | Andrew Zimmern

Poc chuc is the sound of pork meeting fire in a region that’s been cooking meat over fire long before the Spanish stumbled ashore in search of spices and superiority, gold, glory, and God. It’s a Mayan original, a dish so direct and honest it makes barbecue look like a therapy session. And it is so easy, the perfect summer grill meal. Poc Chuc, the citrus-and-smoke kissed pork dish of the Yucatán, along with all the essential homemade sides: pickled red onions, black beans, and a tomato-onion relish is a humble masterpiece. You don’t need a clay comal or a fire pit either… and if it is raining, just break out a cast iron pan and maintain the will to marinate. Enjoy!
