Chicken Potato Casserole - Easy to make and loaded with flavors!

This Potato Chicken Casserole is loaded with flavors! It's very easy to make and the recipe is totally customizable... if you don't like the cheese I've used, simple replace it with your favorite type, for example. I kinda love all kinds of potato casseroles but this one is very high on my list of favorites. I'm using chicken thighs since those are more juicy than breasts, but feel free to alter this too.
