ブロッコリーをクタクタに潰すだけ!たっぷりのチーズとレモンで驚くほど美味しくなるシンプルパスタの作り方

■Ingredients Broccoli 0.5 head Garlic 3-4 cloves Extra virgin olive oil 1 tbsp Pasta Parmesan cheese (plenty) Lemon Salt Black pepper ■Instructions 1. Peel the tough part of the broccoli stem and cut it into bite-sized pieces. Crush the garlic. 2. Put the crushed garlic and plenty of extra virgin olive oil in a frying pan and slowly bring out the aroma over low heat, being careful not to burn it. 3. Once the garlic is heated like a confit, add about 2 tablespoons of the pasta cooking water. 4. Add all of the cut broccoli to the frying pan and cook over medium to high heat until tender. 5. Once the broccoli is sufficiently tender, mash it finely with a wooden spoon or similar utensil, mixing it with the liquid to create a sauce. 6. Add the cooked pasta to the pan and add black pepper and plenty of Parmesan cheese. 7. Mix everything thoroughly while there is still liquid, emulsifying the cheese and creating a sauce-like consistency. 8. Arrange the pasta beautifully on a plate, grate some Parmesan cheese over it, and sprinkle with lemon zest for a refreshing finish. ■Video Highlights Instead of boiling the broccoli with the pasta as in Italian restaurants, we'll cook it separately in a base of garlic oil and pasta water. The key is to add water, not pasta water, if it becomes too salty. While cooking time for vegetables varies from person to person, simmering the broccoli until it's almost discolored and very tender creates an amazing sweetness and a cohesive sauce. Because it's a simple oil-based pasta, the key to the flavor lies in the balance of the savory garlic, the richness of the generously grated Parmesan cheese, and the refreshing taste of the freshly ground black pepper and lemon zest added at the end.
