🔥 Hubli's Fiery Flavors | 3 Legendary Maratha Style Savaji Restaurants
If you're a meat lover, Hubli's legendary Savaji cuisine deserves a place on your bucket list. Known for its fiery gravies, robust flavours, and unapologetically bold use of spices, Savaji food is unlike anything else in Karnataka. On this trip, I explored three iconic Savaji institutions in Hubli – Ambika Savaji, Priya Hotel, and the legendary Nakod – to experience their most celebrated dishes. Our journey began at Ambika Savaji, where we sampled both the Mutton and Chicken Thalis. The Mutton Thali came with Jowar Roti, Mutton Chops, and Mutton Rasa, a fiery coconut-based red gravy floating in a layer of aromatic oil that packed a serious punch. The Mutton Boti, a steamed preparation served with its own broth, showcased meat in its purest form, allowing the natural flavour of the mutton to shine through with minimal spices. Their Kaima Unde was smooth, succulent, and retained just enough texture to keep every bite interesting. The Chicken Thali followed a similar format, with a flavourful chicken leg immersed in the signature red gravy. What surprised me most was how affordable these mutton delicacies were despite their quality and portion size. The next stop was the family-run Priya Hotel on Vidya Road, a place known for its distinctive take on Savaji cuisine. Their Mutton Thali featured chapatis alongside green masala-based mutton chops, where tender ribs bathed in a chilli-forward green gravy delivered remarkable flavour. One of the fascinating aspects of Hubli's Savaji culture is how every restaurant prepares Kaima Unde differently. At Priya, the minced meat balls resembled a rich, oily pickle, coated in red chilli and aromatic spices that elevated the dish to another level. However, the undisputed star was the Mutton Kardu, prepared using young sheep. Soft, succulent pieces of meat swimming in a pool of vibrant red gravy made for one of the most memorable dishes of the trip. It was finger-lickingly good and worth visiting Priya Hotel for that dish alone. Our final destination was the legendary Nakod, arguably one of the most famous names in the Savaji world. Despite being a weekday, the restaurant was packed, a testament to its popularity. We opted for the red masala Mutton Thali, though Nakod also offers green masala variations. The mutton curry that accompanied the thali was simply outstanding, featuring some of the juiciest and most tender pieces of meat I encountered during the entire trip. Among all the Savaji restaurants visited, Nakod's mutton curry was nothing short of addictive. For a change, I tried their green masala Kaima Unde, which turned out to be an absolute flavour bomb. The accompanying green gravy was equally irresistible. No visit to Nakod would be complete without trying their green mutton ribs, where every bit of meat was scraped clean off the bone and savoured. The flavour of the sheep meat combined with the green masala was exceptional. In summary, this was a phenomenal meat affair and one of the most memorable food trails I have undertaken. Every restaurant had its own interpretation of Savaji cuisine, its own signature gravies, and mutton dishes, making each stop unique. One thing is certain: after this trip, I have decided that Hubli will become a regular destination for me, simply to savour these legendary Savaji meals again and again.
