Whenever I can, I like to learn new recipes that I can make for you and that make me learn new techniques. A few weeks ago, Aurora, one of you, wrote to me asking me to prepare the famous fried canes filled with O Carballiño cream, in the style of those they prepare at Cerviño Pastry Shop. I have to admit that I hadn't even seen them, nor heard about them, much less tried them... I have started to investigate, to study the origin and characteristics of this dessert and I bring them to you so that you can prepare it easily at home. It's been a long time since I was so surprised about a dessert... it's simply a divine bite! I encourage you to do them because they won't leave you indifferent, believe me! INGREDIENTS (for about 15-20 canes): FOR THE CANES: 250g all-purpose flour. 50g lard (you can also use butter). 75g white wine. 50g water. A pinch of salt. FOR THE PASTRY CREAM: 3 yolks. 500ml milk. 75g sugar. 35g cornstarch. 1/2 vanilla pod or a few drops of vanilla essence. Sunflower oil to fry the canes. Sugar to batter the canes.
