Set aside to cool before assembling the meals. Chicken Cut the chicken into cubes and place in a bowl, add the lemon juice, chopped garlic, salt, black pepper, paprika, saffron, and a tablespoon of olive oil, mix well and let it rest for at least ten minutes. In a large pan, heat a drizzle of olive oil, sauté the onion and add the chicken, let it sear without stirring too much at first so as not to release too much liquid, then stir until golden brown and juicy.
