Cooking turkish Kadynbudu Cutlets and Shepherd salad in a mountain village

Today I am preparing Turkish cutlets Kadynbudu, which in Turkish means "female thighs". I like to serve these patties with mashed potatoes and shepherd's salad. Cutlets Women's thighs (Kadynbudu kofte) 100 g rice 2 glasses water (400 ml) 1 onion 500 g ground beef 1 egg salt black pepper zira bunch of parsley for breading: 1-2 eggs flour or breadcrumbs Cooking steps: 1. Boil rice until tender. After cooking, drain the rice in a colander to drain excess liquid. 2. Fry the onion until transparent, add 250 g of ground beef (half of the total mass). Cook over low heat until tender (about 15 minutes). 3. In a deep bowl, mix well the prepared minced meat, boiled rice, raw minced meat (the remaining half), egg, parsley and spices. 4. Form cutlets. In the classic recipe, cutlets are formed large. But, you can form cutlets of the desired size. 5. Roll cutlets in flour (or breadcrumbs), then dip in egg. 6. Fry cutlets over medium heat on both sides until golden brown.
