In Yamagata/Shonai area, pork and miso soup is the standard way to make this dish. The rich taste of sake kasu (rice cake) is a delicacy that can only be found in the rice and sake fields. We enjoyed combining sake kasu and sake from the same brewery [Kamikimoto / Sakata Shuzo]. Ingredients we used Taro...500g or more, peeled Konnyaku: Tear into bite size pieces by hand and boil in boiling water. Burdock...1/2 of a burdock, for sashimi Mushrooms (e.g. shimeji mushrooms): 1 package of mushrooms, stoned and broken up Thinly sliced pork belly...200g or more, cut into 4 to 5 cm widths 1 piece of deep-fried tofu - 1 piece, drained in boiling water and cut into pieces 1 leek...cut diagonally to the green part Dashi (Japanese soup stock)...1,000 to 1,200cc Niboshi-oshi (optional to use) - 5 to 6 pieces of dried fish, excluding the head and liver Sake cake...50g or more Miso ... 100g or more Put the dashi/peeled taro in a pot and start to simmer (if it comes to a boil, reduce the heat to low). (2) Add burdock, konnyaku and mushrooms, and when it comes to a boil, add pork belly and cook further. (3) When the meat is cooked, dissolve the sake kasu or miso. (4) Add the deep-fried tofu and green onion and cook quickly (taste and adjust with miso). (5) Eat and drink your favorite alcoholic beverage in moderation. Boil the taro skin in boiling water for about 3 minutes, let it cool down, and then scrape it off with a spoon. Then I scraped off the skin with a spoon. It's easier to peel the taro without scraping the fruit than to peel it with a knife. I used a paste of sake lees. To make it easy to dissolve, put the sake lees into a bowl and add it with the broth from the pot to loosen it.
