Transfer the cubed potatoes to a large mixing bowl. Set it off to the side. To another smaller bowl, add in the dry onion soup mix, french onion soup and the melted butter. Stir until everything has been well mixed. Pour the soup mixture in with the potatoes and, with a large spoon or spatula, toss the potatoes until evenly coated. Transfer the potatoes to a 9x13 inch baking dish. Cover with foil and cook for 30 minutes in a preheated oven at 375 degrees. After 30 minutes, remove from the oven, remove the foil and toss the potatoes around - evenly coating. Return to the oven for an additional 30 minutes uncovered or until fork tender. The length of time it take the potatoes to cook will depend on the size of the cubes. The smaller the cubes, the less time it takes to cook in the oven. While the potatoes are in the oven, grate the cheese. When the potatoes are done, add in half of the grated cheese plus any extra items like the green onions. Mix that together, then top the potatoes with the remaining cheese and any extra green onions. Loosely cover with foil and let the dish rest for 10 minutes so the cheese can melt.
