The Compass!
This one is my most emblematic creation from the original sugar dome creation, it is all about praline and it is composed with a crunchy hazelnut sweet dough, an hazelnut pain de Gênes sponge, a praline soft cremeux, an oozing old-school praline insert, a praline light mousse and a shiny caramel glaze. The dome is made out of cooked sugar and all the other elements out of chocolate!
