Greetings #You don't have to go to the fishmonger anymore to eat fish soup. You can make it much better at home than you can eat at restaurants. Let me answer the question on everyone's mind right away: it definitely doesn't smell fishy :) Fish Soup -2 red snapper (sea bass or sea bream will also work) -2 carrots -1 onion -2 cloves of garlic -A pinch of black peppercorns -A pinch of coriander -A pinch of parsley -1 medium potato -A stalk of celery -1 lemon -1 egg yolk -1.5 liters of water -1 teaspoon of salt -1 tablespoon of butter Instructions: First, we'll prepare the fish broth. To do this, add parsley stalks, a carrot, a celery stalk, and an onion to a pot and sauté until their fragrant flavor disappears. Add room-temperature water and the cleaned fish. Add the black peppercorns and coriander, and bring to a boil. Once it begins to boil, reduce the heat to low and skim off any foam that has accumulated on top. After 25 minutes, transfer the fish to a plate and strain the fish stock. Place the butter in a separate pot. Once the butter has melted, add the flour and sauté. Add the finely chopped carrots, potatoes, and celery. Grate the garlic. Sauté for about a minute, then add the fish stock. Add about 1 liter of water, season with salt, and let it simmer. Meanwhile, remove the cooked fish from the heat, making sure there are no bones. Prepare the marinade with the juice of one lemon and an egg yolk. Set aside some of the soup broth in a bowl to cool. We check the carrots and, if the soup is almost cooked, add the fish fillets. Cook for another 5 minutes, stir in the marinade, and remove from the heat. Add the parsley and stir.
