Kozicowe beer (dialect name: kozicowe psiwo) is a type of low-alcohol beer, brewed for centuries in Mazovia. It used to be popular also in Masuria, Podlasie and Kashubia, today its occurrence is mainly limited to Puszcza Kurpiowska and Puszcza Biała. For the production of canine instead of malt cereals, honey, sugar and juniper berries are used. The name of the drink comes from the dialectal name of young juniper shoots, i.e. chamois. Kurpie made whips to drive horses from young shoots of juniper. Chamois for a dog is a refreshing drink, often consumed in the summer to cool off on hot days and when working in the field. Kurpie have been connected for centuries culturally and economically close to the Kurpiowska Forest from which they drew food, the privileges of keeping beehives or amber digging. Dog kozicowe is a traditional Kurpie drink, for which gifts from Forest - honey and juniper berries. Thanks to them, the chamois has a distinctive feature taste and amazing health properties. Honey strengthens the body and provides the necessary sugar, juniper, in turn, contains bactericidal compounds and enhances the taste of the dish. As Oskar Kolberg and Adam Chętnik wrote, chamois was also a drink ceremonial. They were brewed especially for weddings, baptisms and funerals. Also today, on at many local weddings, parents of the youngest order a chamois for them as a gift young people and wedding guests. Today chamois is made with the addition of honey and hop cones as a product regional and one of the symbols of Kurpie cuisine. It has a bittersweet taste and clear, juniper aroma. It is slightly shiny. It's a great thirst quencher and how says the Kurpie proverb: "If a dog eats a quart, it will stay for a long time". Currently Juniper beer is back. It can be tasted at parties and festivals organized in Kurpie. The film presents the history and present day of juniper beer production in Kurpie Green Forest.
