Rigatoni with Melted Zucchini Sauce

This is a self-imposed Spin It of the Spaghetti with Melted Cauliflower Sauce in That Sounds So Good. Essentially what’s going on here is “grandma-style vegetables” or “cooked to death vegetables”—wherein the vegetable of your choice is lured into submission by a low, slow, oily, and garlic-infused cooking process. The reason it works so brilliantly with zucchini is because all of the excess liquid is gradually driven off by the heat, and at the end you’re left with caramelized zucchini essence.
