Swabian Lentils - Traditional favorite dish of many Swabians !!!

Sunflower oil 1 Tbsp. Flour 1 Tbsp. White Wine Vinegar 1 Tbsp. Tomato paste 1 Tbsp. medium hot Mustard Parsley Served with: Per person 2 Wiener sausages and spaetzle -------------------------------------------------------------------------------------------------------------------------- Cook the lentils according to package directions. Chop the carrot, celery and onion. Cut the bacon into coarse pieces. Heat the oil in a pot and sauté the vegetables. Dust with the flour and sauté briefly. Gradually deglaze with 250 ml of water and stir well. Add the bacon and the cooked lentils. Add another 250 ml of water and stir. Mix in tomato paste and mustard. Bring to a boil and season with the white wine vinegar. The lentils should be slightly thicker than a stew. If it is too thick, just add more water. Simmer for about 15 minutes, stirring occasionally. Chop a handful of parsley and add to the lentils. Season to taste with salt and pepper.
