Family Makes Cashew Brittle on a Sunday

Making peanut brittle is a dangerous process since such high temperature are used to make it. With that said, for those that are curious and want specifics this is how we make it. We add 10 pounds of corn syrup in a copper kettle along with 14 pounds of sugar and 2 quarts of water. Then we heat the mixture up to 270°F before adding in raw cashews; already cooked cashews would give it a burnt taste since they would then be cooked for a second time. Once the candy reaches 285°F we remove it from the stove and add an ounce and a half of salt and 8 ounces of baking soda. Then we pour it on the table and flatten it our and wait for it to cool down enough to cut it into thirds and flip it onto our metal counter where we'll stretch it thin. Then we box it up for sale!
