Kalamay Kapit | Soft and Chewy Kapampangan | Sticky Rice Cake
Kapit is a rolled sticky rice cake with sweetened jackfruit and latik filling. How to Make Kalamay Kapit ✅Ingredients 2 cups coconut cream 1 cup sweetened jackfruit 4 cups glutinous rice flour 1 cup sugar 2 cups water ✅Instructions In a pan over medium heat, add coconut cream. Bring to a boil. Cook until the liquid starts to thicken. Lower the heat and simmer. As the oil separates, regularly stir until the curds turn golden brown. Drain latik from oil. Set aside. Cut sweetened jackfruit into strips. Set aside. In a baking pan, generously brush the bottom and sides with coconut oil. Place a banana leaf in a baking pan. Brush with coconut oil. In a bowl, add glutinous rice flour, sugar, and water. Whisk until smooth. Transfer to the prepared pan and place in a steamer basket. Cover with a kitchen towel and steamer lid. Steam for about 35 minutes. Remove from steamer. Turn over on a baking sheet lined with plastic film, even out with a lightly oiled spatula. Spoon latik and arrange it in the middle of the rice cake. Add langka strips. Roll into a log, enclosing the filling. Allow to completely cool. Cut the kapit with a greased knife into serving portions, then arrange them in a single layer on a serving platter. Thanks for watching!
