I used Translator for this video💕 I apologize in advance for any mistakes💕 Watch in HD for the best quality... 💕 Today's Video: Baking Pine Pollen Lemon Cake | Finnish Summer Magic 🍋🌿 Slow Living Vlog Hello, my dear friends,🌿 Escape into a peaceful Finnish summer day with me! 🌞 In this vlog, I take you through a slow-living journey, from foraging fresh pine pollen in the backyard to baking a beautiful lemon cake with edible flowers and nature-inspired decorations. 🐾 We then go on a nature walk with my dog through wild forests, blooming meadows, and shimmering lakes, soaking in the calm beauty of Finnish summer. Later, I prepare a traditional Finnish summer dinner: buttery new potatoes, pickled herrings, boiled eggs, and herb butter sauce. We end the day with relaxing garden care and cozy moments with my pup. ✨ Whether you're here for foraging, forest walks, Nordic food, or just a gentle escape, this vlog is for you! 📌Pine Pollen Lemon Cake📌 Ingredients Cake: 250g sugar 2 tbsp lemon zest 2 tbsp pine pollen powder (optional) 160g butter (soft but not melted) 3 eggs 2 tbsp fresh lemon juice 2 tsp vanilla extract 3 tbsp vegetable oil 180 ml milk 280g all-purpose flour 1 1/2 tsp baking powder 1/2 tsp salt Ingredients Frosting: (Optional) You can top the cake directly with your choice of lemon curd and decorate it with your prepared decorations. 200ml whipping cream 1 tsp pine pollen powder (optional) 250g confectioners sugar 200g lemon curd 200g ricotta cheese 2 sheets gelatine Instructions: 1. Preheat the oven to 160 °C 2. In a mixing bowl, add sugar, lemon zest, pine pollen powder, and butter. Beat on medium to high speed until it becomes creamy. 3. Add eggs one at a time while continuing to beat the mixture; add fresh lemon juice, vanilla extract, vegetable oil, and milk. Beat until all the ingredients are thoroughly combined. 4. Sift together all-purpose flour, baking powder, and salt. Mix until all the ingredients are incorporated. 5. Line a 10-inch baking pan with parchment paper. Pour the batter into the pan and tap it to release excess air. 6. Bake for 35-40 minutes. 7. Remove the cake from the oven and transfer it to a dish. Allow it to cool. 8. Prepare the frosting. In a mixing bowl, pour the whipping cream. Beat on medium to high speed until it becomes firm. 9. Add pine pollen powder, confectioners sugar, lemon curd, and ricotta cheese. Beat on medium speed until all the ingredients are incorporated. 10. Soak 2 sheets of gelatine in cold water for 3 minutes. 11. Heat the pan at a low temperature and add half of the frosting. 12. Incorporate the softened gelatin and mix well for about 5 minutes or until the gelatin has completely melted. 13. Combine all the frosting and whisk them together to ensure everything is well incorporated. 14. Line the same 10-inch pan with parchment paper, ensuring it is completely covered on the inside. 15. Place the cake in the pan and pour the frosting on top. Chill for 3 to 4 hours or overnight for best results. 16. Decorate the cake with your prepared decorations. 17. Slice the cake into desired portions, and enjoy it with your favorite drinks. Happy baking!
