Ice Cream Sandwich Cake-An Easy Summertime No Bake Dessert Just in Time for 4th of July Fun!

Ice Cream Sandwich Cake 24 ice cream sandwiches 2 tubs (8 ounces each) frozen whipped topping, like Cool Whip, thawed Hot Fudge Caramel Topping of your choice (consider jimmies, M&M’s, Oreo chunks, toffee bits, nuts, etc.) Place 12 ice cream sandwiches in the bottom of a 9” x 13“ dish. You may need to cut the last ice cream sandwich in half in order to get it to fit into the bottom of your dish. If you’re using an extra large pan, like we did when we used the lasagna pan, you may want to consider using an extra ice cream sandwich bar or two, cut lengthwise, to place on the sides to completely fill the pan. Heat the hot fudge in the microwave for just a few seconds to make the hot fudge pourable. It will still be thick, but you can pour it over the layer of ice cream sandwiches and spread it out so that it covers all 12 ice cream sandwiches. Use one tub (8 ounces) of the Cool Whip to cover the hot fudge sauce. Place a second layer of ice cream sandwiches on top of the Cool Whip. Press down slightly to anchor them in place. Heat the caramel for a few seconds in the microwave and pour it over this second layer of ice cream sandwiches. Spread the caramel out over all 12 of these ice cream sandwiches. Cover the caramel with the remaining tub of the Cool Whip. Sprinkle the top of the Cool Whip with the topping of your choice. We used the red, white and blue jimmies since we made it for a Fourth of July dessert. Freeze the dessert for several hours to allow the cake to firm up before slicing.
