Add the rice and sauté again. Then add the white wine and let it reduce, stirring constantly. Gradually add the broth to the rice until it is al dente. Add the cheeses, season with salt and pepper, and stir well until everything is incorporated. Turn off the heat. Add the remaining butter and olive oil and stir again.
