Homemade GLUTEN-FREE TALL PAN PIZZA 🍕SOFT and CRISPY 🍕 CELIACS and CELIACS, good morning! Today we're making our homemade GLUTEN-FREE TAN PIZZA, tall and crispy! The recipe I get asked for the most is the gluten-free pizza recipe. IMPORTANT: This dough is also perfect for kneading in a bread machine or stand mixer. GLUTEN-FREE PAN-DEEP PIZZA Ingredients for a baking pan: • 500 grams of gluten-free flour mix for pizza and bread (I used Caputo Fioreglut brand) • 380/400 grams of water (depending on the gluten-free flour mix you use) • 1/2 cube of brewer's yeast or 1 sachet of dry brewer's yeast • 2 tablespoons of extra virgin olive oil • 1 teaspoon of fine salt • 1 teaspoon of sugar to activate the leavening process Ingredients for the filling: seasoned tomato (with extra virgin olive oil, salt, dried oregano), grated mozzarella for pizza, oil and dried oregano, grated Parmesan cheese PROCEDURE (the same procedure applies for the bread machine, bowl, and (Standard mixer) 1. Dissolve the yeast in the water and a teaspoon of sugar; the sugar will activate the yeast; let it rest for about 10 minutes. 2. Place the flour in a large bowl and add the water and yeast. Mix with a spoon for a few minutes. 3. Add the salt and oil and continue mixing. 4. Pour the dough onto a lightly floured work surface with rice flour or a gluten-free mix. Knead with your hands until the dough is smooth and well-combined and forms a ball. 5. Lightly grease a bowl with sunflower oil and grease the dough ball as well. Place the ball inside the bowl. 6. Cover the bowl with plastic wrap, cover with a tea towel, and let it rise until doubled in size, about two hours. 7. Grease the baking pan with a drizzle of sunflower oil. 8. Pour the dough into the pan and, with oiled hands, shape the dough evenly across the pan. 9. Once the dough is spread out in the pan, cover it with a cloth or place it in the turned-off oven and let it rest for 30-40 minutes. This step will allow the dough to rise again after rolling it out. 10. Garnish the pizza with tomato sauce seasoned with extra virgin olive oil, salt, and oregano; meanwhile, preheat the oven to its maximum temperature, approximately 250 degrees Celsius, fan-assisted, or use the pizza setting. 11. Bake the pizza: Place the pan directly on the base of the oven and bake for approximately 12-15 minutes, keeping an eye on the timing as it varies depending on the power of your oven. 12. Remove the pan from the oven and top with grated Parmesan cheese, mozzarella, a drizzle of oil, and a little oregano. 13. Return the pan to the oven on the middle rack for another 5-7 minutes. 14.
