PASTA: We chose square spaghetti instead of the classic round spaghetti, 300 grams. PIG CHEEK OR BACON ? : We have chosen to use pig cheek about 100 grams, cut into cubes and put in a pan without adding oil, it is fried in its own fat. Eggs: 6 yolks and one egg white, all beaten in a bowl where we then added the grated cheese. CHEESE: 60 grams of Pecorino Romano and 20 grams of Grana Padano cheese grated and mixed, 60 grams we mixed them with the egg to form a cream and the remaining 20 to garnish the finished dish. PEPPER : Absolutely only black pepper in grains to be ground at the moment. The preparation is simple, you bring the water to a boil, pour the pasta and cook it, being careful not to salt it completely because the pecorino cheese will already give enough flavor to the dish. In the meantime, fry the pig cheek, beat the eggs and add the grated cheese. Drain the pasta leaving it not completely dry, slightly wet, in the egg and mix. Add part of the pig cheek and a sprinkling of pepper. Finally, serve with the remaining pig cheek and freshly ground cheese and black pepper. N.B. The temperature of the pasta must absolutely not exceed 65 degrees centigrade otherwise, in contact with the egg, it will solidify by cooking it, so if the pasta just drained is boiling, it is recommended to wait a few seconds to let it cool.
