Sweet Pea Hummus

This Friday is Eat Your Veggies Day. Jenna Gorman from the Land of 10,000 Recipes joins us with a recipe that will help you get your daily vegetables! Sweet Pea Hummus PREP TIME: 10 min | SERVES: 4–6 Ingredients: • 2 cups frozen peas, thawed • ¼ cup olive oil • 1 lemon, juiced • 1 garlic clove, cut in quarters • Salt to taste • Pepper to taste Directions: 1. Reserve ¼ cup of peas for garnish. 2. Add remaining peas to a food processor and pulse. 3. Add olive oil, lemon juice, garlic, salt and pepper. 4. Blend until smooth, scraping down the sides as needed. This may take several minutes. 5. Transfer to a serving bowl and top with reserved peas.
