The process is amazing to watch and the final lamb over rice is something totally unique and surprisingly delicious. It’s going to be an Omani food adventure! Once we reached the edge of the sand dunes we transferred to a 4x4 and into the sand dunes where we met Badar. He’s going to prepare for us a whole lamb, cooked shuwa style - which is one of the ultimate best dishes of Oman and a celebration of a meal. But Badar’s Bedouin desert version of Shuwa is different than other parts of the country. His family recipe included spices and dates marinated over the lamb, then baked in hot sand for a few hours. The result was mind blowing, so good that Ahmed and I couldn’t believe it!
