Fresh milk full fat-400 gr. Sugar granulated-260 gr. Milk butter melted lukewarm-200 gr. whole eggs -5 PCs. 200 gr. Fresh yeast-50 gr. Orange zest-1 PC. Orange juice-30 ml Mahlepi-10 gr. Mastic grated-1 gr. Salt-1 gr. Vanilla - 1 gr. Egg white to coat-1 PC. Almond slices for sprinkling Preparation: ------------- Put in the bucket of mixer the milk,sugar,eggs,salt,Mastic,vanilla, put the hook into the mixer and beat to combine the ingredients well. Then add the flour and all the other ingredients..(rub the yeast with your hands) apart from the butter and continue beating in the mixer. Once the mixture is formed, add slowly the lukewarm butter, continuing to beat. When the butter is finished, put the mixer on medium speed and measure from 15-20 minutes of whisk and stop. Cover the dough with cellophane very well and put it in a warm place to 30 degrees temperature for half an hour until it rises. After emptying the dough on the bench, divide it and shape your tsoyrekia. Place them in a hot place up to 30 degrees for half an hour until they rise. When they rise, brush them very gently with the egg white, where you have beaten them a little with a fork. Sprinkle with almond.
