Almond & Coconut Blueberry Crumble Serves 4 Prep 10 mins (+ 5 mins cooling time) Cooking 40 mins 400g Eureka blueberries 250g strawberries, sliced ½ small lemon, rind finely grated, juiced ½ vanilla bean pod, seeds scraped ¼ cup (60ml) maple syrup 2 tbs tapioca flour or cornflour Crumble topping 1 cup (120g) almond meal Pinch of sea salt flakes 1/3 cup (75g) coconut oil 1 tsp ground cinnamon ¼ cup (45g) coconut sugar 1/3 cup (25g) shredded coconut 1/3 cup (45g) mixed nuts, such as flaked almonds, macadamia and hazelnuts, chopped 1. Preheat oven to 180°C. Place the blueberries, strawberry, lemon rind, lemon juice, vanilla seeds, maple syrup and tapioca flour or cornflour in an ovenproof pie dish. Stir until well combined. 2. To make the crumble topping, place the almond meal, salt and coconut oil in a bowl. Use your fingertips to rub the oil into the almond meal mixture until the mixture resembles large breadcrumbs. Stir through the cinnamon, coconut sugar, shredded coconut and mixed nuts. 3. Sprinkle the crumble topping over the top of the berry mixture in the dish. Bake for 35-40 mins or until the mixture is bubbling and top is golden brown. Set aside for 5 mins to cool slightly before serving.
