Let simmer uncovered for 45-50 minutes until cooked. Once done pour off any excess water and let the rice sit on the counter with the lid on while you make the coconut milk Blend 2.5 cups coconut flakes with 3 cups of water. Strain through a nut milk bag, then pour the coconut milk back into the blender along with 8-10 dates, 2 tsp vanilla extract, pinch of salt, 2 tsp cinnamon.
