I keep seeing Amer Picon come up lately so I thought I would talk about a couple Amer Picon Substitutes that I know of in case you are in America like me, and can't get hold of Amer Picon. One is by Jean Felix over at ‪@TrufflesOnTheRocks‬ He mentioned one in a video a couple weeks back, and later indicated that he wanted to come up with a version that replicated Picon before the recipe was changed in the 70s. Jamie Boudreau figured something out back in 2009, (https://spiritsandcocktails.wordpress...) so I am making that version and i will compare it to JF's . I look forward to seeing what else he devises so I can try that as well. So, Jean Felix's Amer Picon Substitute is this: 6 oz Suze 6 oz China China Bigallet 1 oz Cointreau 1 oz Angostura Orange bitters 3 oz Simple syrup I made a 1/4 sized version just to test it Amer Boudreau is this: 3 bottles Amaro Ramazzotti 7 ½ cups orange tincture ¾ bottle Stirrings Blood Orange bitters ¾ liter Evian place all ingredients into a container and stir. allow ingredients to get to know each other for at least one week. filter and bottle. ORANGE TINCTURE take any size jar, and fill it half way with dried orange peel. fill remainder of jar with high-proof vodka (I use Smirnoff Blue Label) let sit for one to two months strain and filter I did a 1/6 version, which still yielded a full bottle of Picon. Both of these are pretty good, and I have no idea how they compare to current or past Amer Picon, because I can't get it. I flipped the proportion of Picon to Calvados in mine: 1.5 oz Amer Picon .75 oz Calvados .5 oz Lime Juice .25 oz Grenadine Stir, no garnish Cheers!
