LAMB MAFFÉ

Cooking time: 40 mins. (25 mins without lamb for vegetarian/ vegan meal). Ingredients: Diced lamb (400g) Peanut butter (340g) 1 Tin of tomato purée (142g) 1 medium onion 3 garlic cloves 1-5 fresh scotch bonnet chillies (optional)   3 carrots 3 parsnips cut into 4 or 5 ½ aubergine cut into 4 Mixed peppers; use ½ of each colour and cut into 4 4 bay leaves Any oil of your choice 8 tbsp of: salt, coarse black pepper, lamb seasoning, 5 maggi cubes all guaranteed to be found at Asian or Black supermarkets NB: for vegan or vegetarian meals, you can still use the lamb seasoning (it’s a variety of dry mixed herbs) it doesn’t contain any poultry neither do the maggi cubes.
