SIMPLE YELLOW FISH SOUP INGREDIENT 1 • 1 teaspoon Salt • 1 teaspoon Turmeric Powder • 3 tablespoons Water • 4 cloves Garlic • 8 Shallots INGREDIENT 2 • 3 cm Ginger (bruised) • 1 stalk Lemongrass (split and bruised) • 5 Lime Leaves, torn • 5 Bird's Eye Chilies (chopped) INGREDIENT 3 • 700 grams Grouper (cleaned) • 3 cups (750 ml) Water • 10 Whole Bird's Eye Chilies • 1/2 teaspoon Salt • 1/2 teaspoon Ladaku • 2 handfuls (30 grams) Basil Leaves • 1 lime (squeeze for juice) • 5 tablespoons Oil HOW TO MAKE 1. Mix and puree Ingredients 1 (shallots, garlic, salt, turmeric powder, water). 2. Sauté the ground spices until fragrant. 3. Add ginger, lemongrass, lime leaves, and chopped cayenne pepper and sauté again until wilted and fragrant. 4. Add the fish, 750 ml of water, whole cayenne peppers, and salt. Bring to a boil. 5. Once boiling, continue cooking the fish for 7 minutes. 6. Add Ladaku and stir briefly. 7. Turn off the heat, then add the basil and lime juice and stir well. 8. Serve hot.
