I crushed the beets into small pieces. I boiled the mixture to extract the sugars. I separated the pulp, leaving only the syrup. I added yeast and started the fermentation process. I distilled the resulting mash in a two-retort alembic—in a single distillation! The result: Buryachikha moonshine. The result is a unique distillate with its own character. Its aroma and flavor are unlike anything else: it's not a classic sugar moonshine, not grain-based, and not fruity. It has its own unique profile—not a masterpiece, but not repulsive either. Characteristics: Bright, unique aroma; Distinctive flavor with characteristic sugar beet notes; Requires a short rest after reduction (dilution with water); Pairs well with meat dishes—especially fried and smoked meats. Why is this important? Sugar beet moonshine has a complicated reputation. Many consider it "second-rate" due to technological errors made in the past. But I've proven that with the right approach, beets can produce an interesting, worthy beverage.
