BROCCOLI CAESAR SALAD | Tahini Caesar Salad Dressing + Broccoli and Napa Cabbage

There's a new caesar salad in town: a broccoli and napa cabbage with tahini caesar salad. Similar flavors as the original, but we're bringing in a couple of new elements to dial it up. Broccoli and napa cabbage take the place of romaine lettuce, fried capers add a little briny crisp, and we show you how to use tahini to add even more depth to the flavor profile of one of America's favorite salad dressings. And yes, there will be croutons bc what kind of monsters would we be if we didn't add crouts?! For this recipe you will need 1.5 LBS Broccoli Crowns 1/2 LB Napa Cabbage Heart 125g or 2 Cups Cubed Stale Rustic Bread Juice of 2 Lemons 1 Garlic Clove 5 Anchovy Filet Rinsed 100g Tahini 100g Water 150g Neutral Oil (I used Avocado) 3 TBPS Parmesan 2 TBPS or 50g Drained Capers Salt ...also oil for cooking capers and broccoli FOR THE DRESSING 1. In a tall sided mixing cup or blender, combine tahini, water, lemon, garlic, anchovy with immersion blender or regular blender until well pureed 2. Stream in oil until well emulsified 3. Refrigerate until needed FOR THE BROCCOLI 1. In a medium Saute pan, pan roast broccoli for about 30-45 seconds until charred lightly and just barely cooked, season with salt, seed aside on paper towel to drain 2. Working in batched finish the rest of the broccoli and set aside FOR THE CAPERS 1. In a medium saute pan on high heat, add in drained capers, followed by 2 tbsp neutral oil 2. Fry capers on high heat until browned, puffed and crisp 3. Set aside to drain on paper towel until needed FOR THE CROUTONS 1. In a medium bowl, combine the bread with about 1 tsp salt and 2 tbsp oil 2. Lay out on 1/4 sheet pan and cook at 375 degrees until, dried, toasty and browned. About 15 minutes 3. Once cooled chop roughly, set aside TO BUILD SALAD 1. In a large mixing bowl, combine grated parmesan, napa, broccoli, capers, croutons and broccoli. Dress with tahini Caesar and toss to combine. Plate up, topping with more capers, croutons, dressing and parmesan. ENJOY!!!!!
