In 2021, he received a two-star certification for the Tsumoto-style fish preservation and aging technique – the ultimate blood draining method – and in 2023, he became a three-star certified technician, the highest rank. He shares information on fish preparation, aging techniques, and fish dishes on Instagram and other platforms. He retired from teaching in 2025. Currently, he is independent, working as a single-line fisherman while also conducting fish research, organizing food education and fish consumption promotion events, and teaching fish preparation and aging techniques to foreigners. He also works as a chef serving aged sushi.
