Refresco, fruta y salsa: tres fermentados caseros para principiantes | EL COMIDISTA

“Fermenting” might conjure up images of what happens when you leave something in a Tupperware container in the fridge for too long, open it, and it smells strange. However, fermentation is an essential process in many of our everyday foods, such as bread, cheese, yogurt, beer, and wine. Humanity has been using it as a preservation method since time immemorial, but in recent years it has become fashionable to apply it to all kinds of foods in order to discover new flavors and textures. In the video above, you'll find a quick and free fermentation lesson for beginners, taught by a man who knows almost everything about it. Robert Ruiz, head of LOV Ferments and author of the book Fermentar (Fermenting), shows us how to make three beginner-friendly preparations: a ginger and lime soda, pickled loquats, and a peanut and banana sauce.
