Then a Yale-trained dealmaker named Gregg Engles bet that scale could beat biology, rolling up more than forty family dairies into Dean Foods until it controlled nearly a third of America's milk and ran over 120 plants. But the same debt and size that made the empire unstoppable made it unable to bend, and when its biggest customer, Walmart, opened a single milk plant of its own in 2018, the giant began to fall.
