Rita Lobo teaches how to make MAXIXE FAROFA WITH EGG. In this version of the FAROFA recipe, full of personality, the main ingredient is the MAXIXE, a vegetable used in the cuisine of the north and northeast of the country. A tasty and flavorful side dish to accompany meats and poultry at family lunch. #NhacGNT #CozinhaPrática #RitaLobo Ingredients: 1 ½ cups (tea) of flaked yellow cornmeal 5 maxixes (green okra) 1 onion 3 eggs 2 tablespoons of butter 3 tablespoons of oil zest of 1 lime salt to taste Preparation: Wash the maxixes well with a vegetable brush under running water. Discard the stem and, with a small knife, scrape the surface of each maxixe to remove the thorns. Cut each maxixe into quarters lengthwise, and slice into 0.5 cm pieces. Peel and slice the onion into thin half-moons, 0.5 cm thick. In a small bowl, crack one egg at a time and transfer to another bowl – if one is spoiled, you won't ruin the whole recipe. Beat with a fork just to mix the whites with the yolks. Heat a large skillet over medium heat. When hot, drizzle with oil and add the onions. Season with a pinch of salt and fry for about 8 minutes, stirring occasionally, until golden brown. Add the butter and wait for it to melt. Add the gherkins, season with a pinch of salt, and sauté for 2 minutes until wilted. Make a space in the center of the skillet and add the beaten eggs, season with salt, and stir quickly with a spatula until they begin to cook, then mix with the sautéed vegetables. Add the cornmeal little by little, stirring with a spatula to incorporate. Cook for another 3 minutes, stirring occasionally, until the farofa is lightly toasted.
