If you soak and combine them with water, you might not get the same flexibility. You can also use different flours in this recipe to achieve a flavor with almond essence. For example, you can make marzipan by adding essence to a less expensive flour like hazelnut flour. Since it will be used as a filling for cakes, breads, and chocolates, it's important to get the almond scent out; otherwise, the other flavors in your dessert will overpower the already small amount of almonds.
