You'll probably know Xian for its famous Terracotta Warriors or, if your knowledge of Chinese history goes a little deeper, for having been the political center of China and the eastern end of the Silk Road. The capital of Shaanxi province also has another culinary honor: being the birthplace of biang biang noodles. These extra-long, extra-wide noodles, which you could almost make a belt out of, have recently become popular in other parts of China and are now available in Spain as well. A small establishment in Madrid's Chueca neighborhood, Biang Biang Bar, makes them by hand and serves them with different sauces and accompaniments. Owner Lei Ling shows us how they're made and shares a recipe with eggplant.
