【認真教】#4 櫻花和菓子 製作教學|菓子君認真教

練切製的菓子因為能細膩呈現事物的美感,所以常被用於日本茶道與茶會,是一款充滿魅力的和菓子。這次示範基本作法與造型「櫻花」,製作難度並不太高,有興趣的話請一定要做做看! -材料- 練切: 白豆沙餡 200g 求肥 18g 水飴 5~10g(視情況增減) 白豆沙餡: 白鳳豆 適量 白雙糖 擠乾水分的豆沙重量x60% 飲用水 糖的重量x60% 求肥: 白玉粉 30g 糖 60g 水 60g -製作方法- 1、將白鳳豆製成偏乾的白豆沙餡。 (做法同紅豆餡:   • 【認真教】#3 抹茶水羊羹 製作教學|菓子君認真教   ) 2、白玉粉加水27g拌成團,再加入剩下的水與糖攪拌均勻。 3、將白玉粉反覆微波加熱並攪拌至出現透明感。 4、將完成的求肥撒上片栗粉或熟太白粉備用。 5、鍋中加入少許飲用水與200g白豆沙炒熱。 6、加入18g的求肥持續拌炒至不黏手的程度。 7、加入5~10g的水飴拌炒均勻後趁熱過篩。 8、將過篩完的練切搓揉後分成小塊冷卻,重複三次。 9、將練切以食用色素染色。 10、包入豆沙餡並塑形即完成。 ---------------------------- Instagram:  / chukuowagashiya   Facebook :  / chukuo.wagashi   掬菓和菓子屋:https://chukuo.waca.ec/ ---------------------------- 攝影:Argyi 後製:Argyi 音樂:At Home By L-Ray Music (https://www.premiumbeat.com/royalty-f...)
