Remove a piece of the reserved fat and rub it all over the grill grate to lubricate it and prevent the meat from sticking to the grill. Chop the remaining fat into small pieces, place in a pan, and heat until melted. This melted fat will be used to brush the flank steak throughout the cooking process. It's very important to keep the pan with the fat near the heat so that the fat remains melted. It adds shine and flavor to the meat. Season the flank steak with flaky salt and black pepper to taste on both sides and set aside for 10 minutes to let the meat absorb the seasoning. Add the parsley and rosemary, tie them together to use as a basting brush. Insert the herb brush into the pan of fat, brush the meat, and grill. Brush the meat again with the fat from time to time.
