Viral sweet potato bowl idea: / 514184482479748067 RECIPES: High Protein Sweet Potato and Hot Honey Bowls: These hearty, flavor-packed bowls are perfect for an easy weeknight dinner or meal prep—full of color, protein, and a little sweet heat thanks to homemade hot honey! For the Roasted Sweet Potatoes: 3 large sweet potatoes, cubed 2 Tbsp avocado oil 1 tsp chili powder 1 tsp smoked paprika 1 tsp cumin 1/2 tsp garlic powder 1/2 tsp onion powder Salt & black pepper, to taste For the Taco Ground Beef: 2 lb ground beef 1 tsp chili powder 1 tsp cumin 1 tsp paprika 1 tsp garlic powder 1 tsp onion powder Salt & pepper, to taste For the Cilantro Cream Sauce: 3/4 cup plain Greek yogurt 2 tsp lime juice 1 tsp minced garlic 1/2 tsp cumin 1/2 tsp chili powder Garlic salt, to taste 1 small handful of fresh cilantro Optional: 1 tsp honey if skipping hot honey For the Hot Honey: 1/2 cup local raw honey 1/2 tsp red pepper flakes Splash of apple cider vinegar For Assembly: Sliced avocado Cottage cheese (full fat or low fat) Optional: Cooked rice & shredded cheese to stretch for a larger family How To: 1. *Roast the Sweet Potatoes* Preheat oven to 425°F. Toss sweet potato cubes with avocado oil and seasonings until well coated. Spread on a parchment-lined sheet pan and bake for 20 minutes. Toss and return to the oven for another 15–20 minutes, until golden and slightly crispy. 2. *Cook the Taco Beef* In a skillet over medium heat, cook ground beef until browned and fully cooked. Drain if needed, then stir in seasonings to taste. 3. *Make the Hot Honey* In a small saucepan, gently warm honey with red pepper flakes over low heat (don’t boil). Remove from heat, stir in a splash of apple cider vinegar. Optional: Strain out pepper flakes for a milder version. Store in a small jar. 4. *Blend the Cilantro Cream Sauce* Add all sauce ingredients to a wide-mouth mason jar. Blend with an immersion blender until smooth and creamy. 5. *Assemble Your Bowls* A scoop of cottage cheese Roasted sweet potatoes Taco-seasoned ground beef Sliced avocado Drizzle with cilantro cream sauce and hot honey Optional: Add rice and shredded cheese to stretch the meal 💡 Tips These bowls are great for meal prep—store components separately and reheat as needed. Add greens like shredded romaine or baby spinach for extra crunch and nutrients.
