Pruning doesn't exist in nature; there's a branch that breaks, typically from the wind or the weight of snow, a branch that perhaps had a defect due to presumed rot, or a branch eaten by an animal, such as a goat. The jujube (Ziziphus jujuba) is an ancient, hardy, and long-lived fruit tree, often nicknamed the "Chinese date," belonging to the Rhamnaceae family. A deciduous tree, often with twisted and thorny branches, it can reach 5-6 meters in height, and is slow-growing. It is a very hardy plant, tolerating cold well and adapting to a variety of terrains. The fruit, the jujube, is an oval or round drupe, harvested in September-October. Jujubes change flavor and texture depending on their ripeness: Unripe (green): similar to an apple in crunchiness and flavor. Ripe (brown/scarlet): they become sweet and wrinkled, reminiscent of dates. These fruits are famous for the renowned "brodo di giuggiole" liqueur; they can be eaten fresh, candied, dried, or made into jams, syrups, and preserves. Rich in vitamin C, vitamin A, iron, and calcium, they have sedative and calming properties against anxiety and insomnia, as well as being beneficial for the gastrointestinal system thanks to the fiber and for the cardiovascular system. An extremely hardy tree, it tolerates intense cold well (down to -10°C) and can grow up to 1,000 meters above sea level. It is considered an "ancient" or forgotten fruit, today grown primarily for ornamental purposes or for amateurs in historic orchards.
