No softwood! ✅ Store wood in a dry place – damp wood produces a lot of smoke and little heat. ✅ Prepare accessories – heat-resistant gloves, infrared thermometer, pizza peel, turning peel and lighter. ✅ Prepare pizza dough & ingredients – so that everything is ready when the oven is hot. Light the fire ✅ Check air flaps – leave the back and top of the chimney open to improve air circulation. ✅ Build a stack of wood – place pieces of wood in the fire basket, start with kindling or natural lighters. ✅ Heat up slowly – add wood every 5-10 minutes to achieve an even temperature. ✅ Measure the target temperature – the stone should be at least 400-450°C (check with an infrared thermometer). Bake ✅ Keep the fire constant – add a small piece of wood every few minutes to keep the temperature stable. Particularly important for the top heat. ✅ Confidently place the pizza in the middle and watch. ✅ Turn the pizza – after 20-30 seconds, turn it 180° with the pizza peel. ✅ Pay attention to the baking time – the pizza should be ready in 60-90 seconds.
