A seafood stew with all the flavor of the sea and the warmth of tradition? Today, Karlos Arguiñano teaches you how to prepare a monkfish and mussel stew, a seafood version of the classic shepherd's stew from Extremadura and La Mancha, which was traditionally made with lamb. 🐟🌊 ✅ A seafood twist on traditional fish stew ✅ Juicy monkfish, mussels, and squid in the same dish ✅ A spectacular dish in 1 hour and 20 minutes 📝 INGREDIENTS (Serves 4): 1 monkfish tail (800 g) 500 g mussels 200 g squid rings 4 large potatoes 3 cloves of garlic 1 onion 1 ripe tomato 100 g fresh peas 3 tablespoons tomato sauce 150 ml beer 1 liter fish stock 1 tablespoon sweet paprika Extra virgin olive oil, salt, parsley 👨‍🍳 STEP BY STEP: 1. Prepare the sofrito: Heat oil in a casserole dish. Finely chop the onion and garlic, and sauté for 6-8 minutes. Add the beer and let it reduce. Stir in the diced tomato and sauté for 4-5 minutes. 2. Add the mussels: stir in the paprika and tomato sauce. Clean the mussels (remove the beards), add them to the pot, and transfer them to a plate as they open. Skim off any remaining beards and set them aside. 3. Cook the squid, potatoes, and stock: add the squid rings and cook for 5-6 minutes. Stir in the roughly chopped potatoes, pour in the fish stock, cover, and cook for 30-35 minutes. 4. Add the peas and monkfish: add the peas and cook for 8-10 minutes. Cut the monkfish into chunks, season with salt and pepper, and add to the pot. Cook for another 5-6 minutes. 5. Finish and serve: Add the shelled mussels, give the casserole a shake, sprinkle with chopped parsley, and serve in a deep bowl. 💡 KARLOS'S TIPS: Resting: Let the stew rest for a few minutes before serving.
